superfood blast in a bowl. breakfast of today

As I'm on study leave I've got a little more time on my hands to adapt my usual bowl of porridge. I began eating porridge over 2 years ago as I became bored of cereals and also because of its known health benefits, but I soon discovered it's actually possibly just about the most delicious breakfast ever. (I'm aware it's not for everyone; I'm weird and I'm not a fry up lover - kinda developed out of a forced habit a while back).

Most people's reaction to the sound of porridge is automatically ICK as they remember their childhood morning's of gloopy, stodgy, saggy-skinned breakfast bowls that their mums forced down their throats. This will change your mind entirely! My typical breakfast on a routine day is porridge with cinnamon and a fruit topping. Today I made a breakfast containing lots of "superfoods" (nutrient rich foods/ i.e. v healthy) and it was SO delicious. Ingredients included and other porridge recipe ideas listed! Yum. Enjoy my eye candy :)

Vitalife green tea and a bowl of berrylicious porraaaaaaage
This is the brand I always get. For people who can't be bothered to faff measuring the porridge in the mornings, "Oats So Simple" do packaged bags which are super fast to prepare
It was so tasty that I made a berry and nut bowl after to nibble at during revision
Ingredients:
  • 40g jumbo oats
  • 50ml skimmed milk (sometimes almond milk)
  • 100ml water
  • handful of blueberries
  • couple of raspberries
  • 2 strawberries
  • pinch of sunflower seeds and goji berries
  • sprinkles and sprinkles of ground cinnamon
> Add oats, milk, water, blueberries, strawberries (chopped) and cinnamon into a bowl and stir. Put in the microwave for two minutes. Stir and put back in the microwave if you like it thicker and drier like me, or add more water/milk if you prefer it more creamy/less thick.
>Top with the raspberries, goji berries, nuts, a little more cinnamon and you're good to go.

Other ingredients I sometimes use instead of the above berry mix:
-half a chopped apple and cinnamon, this genuinely tastes like an apple crumble/pie!
-blueberries and honey
-strawberries, cinnamon and chopped almonds or pine nuts
-plain porridge topped with brown sugar
-melted teaspoon of peanut butter + half a chopped banana (perfect pre or post workout meal)

and a little tip, rather than wasting the other half of the banana, put it in the freezer and have the other half the next day. Or do something else I do and feed it your greedy sibling who's just eaten the entire fridge :) (Mark)

Healthy, tasty, filling and worth making for the morning's. Breakfast is my favourite meal.

I saved this post as a draft earlier, as I was blogging during a revision break. I then had a super tasty, camera worthy lunch to add in so here you go!
Warburtons wholemeal pitta, sweetcorn, cucumber, baby leaf lettuce, red pepper, beetroot, spring onion and smoked salmon terrines. I drizzled on a little balsamic vinegar after too

All chopped and topped onto my toasted wholemeal pitta

Healthy fats, protein, low cal, and something different from chicken for once!
I'm loving blogging at the minute and I'm becoming addicted through motivation from how much feedback I'm getting from readers! It makes my day when I get texts and tweets off people telling me they love my blog.. when it all started out simply as a hobby/photography portfolio- I never thought people would actually enjoy reading my blog. So thank you thank you thank you for all the compliments, genuinely means a lot to me!

Here's a snapchat I received from none other than a fave of mine Tahja Grimes, how lovely! I want to try this lunch one day as I'm huge couscous lover
